Directions

Start by making the whipped cream. In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with a hand mixer or stand mixer until soft to medium peaks form. The whipped cream should hold its shape but still look smooth and spreadable.

For a slightly richer version, beat the softened cream cheese until smooth in a separate bowl, then fold it into the whipped cream. This step is optional, but it gives the dessert a little more structure and a cheesecake-like flavor.

Next, spread a thin layer of whipped cream on the bottom of an 8-by-8-inch baking dish or similar serving dish. Add a single layer of graham crackers over the cream, breaking pieces as needed to fit the dish.

Spread another layer of whipped cream over the graham crackers, then add a layer of sliced strawberries, blueberries, and raspberries. Repeat the layers: graham crackers, whipped cream, berries. Continue until you have used the ingredients, finishing with a generous layer of whipped cream and berries on top.

Cover the dish tightly and refrigerate for at least 4 hours. For the best texture, chill it overnight. The longer it rests, the softer and more cake-like the graham crackers become.

Before serving, garnish with extra berries, lemon zest, mint leaves, or shaved white chocolate if desired. Slice into squares and serve chilled.

Easy Variations
